Lemon curd – coming soon!  I think I’ll make hubby harvest while I’m out of town~

Picked my weird ass octolemons today. My tree is reverting back to its genetic origins.

My Lemon Curd Recipe:

1 cup sugar

1/2 cup unsalted butter, cut into pieces

3 Tbs. grated lemon peel

2/3 cup lemon juice

3 large eggs

Bring first four ingredients to simmer in a large saucepan.  Stir constantly.  Whisk eggs in separate bowl.  Gradually whisk in several spoons of the hot butter mixture.  Add egg mixture to pan and stir over low heat until thick and mixture leaves a path on the back of a spoon.  Do not boil.  Cover with plastic wrap and chill several hours or overnight.  Or pour into jars and give away to those you love.
