Vanilla Pudding in a Jar!

My own invention – Vanilla Bean pudding in a single serving Mason jar.

I had some milk left over from Christmas.  I don’t really drink milk, but my kids do.  I needed to do something with it.  I do not like wasting food.  So I decided to make vanilla bean pudding with real vanilla beans.

Super easy – here’s the basic recipe:

(I used 5 cups of milk so adjust the recipe accordingly.)

1 egg yolk
1 tablespoons cornstarch (plus maybe 1 teaspoon)
2 tablespoons sugar
1 cup milk
seeds scraped from 1 vanilla bean, plus the bean pod.

Whisk all ingredients together in a saucepan.  Turn heat to medium and heat, stirring constantly, until mixture comes to a simmer.  Remove from heat and stir as mixture thickens.  Remove vanilla bean pod.  Lick it before you throw it away.  Pour pudding into small Mason jars.  Cool and store in the refrigerator.
