My thoughts and prayers are with everyone affected by the explosions in Boston. I’m so sorry. Despite everything that’s happened in recent decades America has remained an open trusting society. I’d hate to see that change. I hope those responsible are brought to justice - sooner rather than later. The amazing thing about the events of yesterday? While some people seemed stunned and disbelieving- you could tell from their demeanor the horror simply hadn’t registered yet - even more people ran to help. In the midst of great evil there is still greater good.

I’ve been watching the changing McDonald’s menu with interest. This new premium chicken wrap they’ve been promoting looks pretty dang good.
I had some raw tortillas in my cheese drawer so figured, eh… no-brainer. I can make my own chicken wraps. Took all of 30 minutes.
You need the following:
4 boneless, skinless chicken breasts, sliced for fajitas
1 bunch scallions
1 bunch radishes
1 English cucumber
1 tomato
gem lettuce
1 package flour tortillas (raw if you can find them)
Sweet chili sauce
Toss the sliced chicken with olive oil, salt and pepper to taste, and any seasonings you prefer. Spread in a baking dish and roast at 375′ for approximately 25 minutes.
While the chicken is cooking, thin-slice veggies and prepare the tortillas.
Spread sweet chili sauce over the tortilla. Layer on veggies and chicken. Wrap. Eat. Enjoy.

Oh, the Boston story is so sad. I’m still upset by it.
I’m not remotely tempted by the McD wraps. They cook the chicken then freeze it, then reheat it and it gets that horrendous gelatinous texture that’s just revolting. But yours? Oh my, those do look tasty and fresh. Thanks for the recipe!
